Our chefs select premium wagyu beef from a long-established Sengokuhara butcher, served shabu-shabu style.
More than ten kinds of freshly picked morning and seasonal vegetables from the foot of Mount Hakone accompany the dish, allowing you to savor their natural flavors and aromas.
For the shabu-shabu broth, we use a generous amount of the highest-grade kombu from Rausu, rich in umami, and finish it tableside with the addition of fragrant Japanese sake. The Wagyu beef loin is lightly dipped in the broth, just enough to retain a hint of red meat color, and you can enjoy the natural flavor and tenderness of the meat.
Two sauces are offered: our house-made aged ponzu with Shonan Gold and the chef’s recommended rich sesame sauce, which can be enhanced with extra sesame paste for added depth.
Our “Sukiyaki course” also features premium wagyu beef carefully selected by our chefs from a long-established butcher store in local Sengokuhara. Only the finest cuts and brands those best suited for sukiyaki are chosen. To begin, dip the melt-in-your-mouth beef into rich and silky eggs from free-range domestic chickens for the classic sukiyaki experience.
We offer two cuts of beef, tenderloin and loin. You can enjoy the subtle differences in flavor and texture between them.
In addition, the course also includes over 6 varieties of rare mushrooms, fresh vegetables delivered directly from farms, and seasonal vegetables grown at the foot of the Mount Hakone, offering a deep taste of nature’s bounty.
The special breakfast at HAKONE KAIRAI is a like a treasure chest, featuring over 10 carefully crafted dishes presented with elegance and color. Savor a heartwarming morning as you're gently embraced by the light of day.
